What are the responsibilities and job description for the Sous Chef position at Clover Hill?
The Sous Chef role at Clover Hill reports directly to the Executive Chef, Charlie Mitchell. The role consists of overseeing the entire restaurant when the Executive Chef is not present or in dinner service. The main focus of the Sous Chef (but not limited to) is purchasing, organization, AM production, equipment/space maintenance, and overall kitchen flow. Daily responsibilities :
- Manage the receiving of Orders
- Manage AM production
- Manage organizing of production kitchen
- Manage overall cleanliness of the kitchen
- Manage/ Develop Porter cleaning schedule
- R&D task
- Daily purchasing of dry goods, produce, paper goods
- Updating recipes
- Updating Prep sheets
- Communication with the GM & Chef about menu items and information
- Dinner service support
Salary : $65,000 - $75,000
