Residential Dining
Residential Dining Services’ (RDS) mission is to deliver an outstanding dining experience crafted by an engaged team dedicated to social and environmental responsibility. RDS operates 5 dining centers, 2 convenience stores, a full bakeshop, and a warehouse. We employee more than 1,000 employees who serve 12,000 meals per day to the 6,000 students who live on campus.

Position Summary
The Lead Cook position acts as a leader over a defined area of a foodservice operation to ensure the highest standards of quality and customer service are achieved.
The Lead Cook will be responsible to organize their area to assure staff are well informed and prepared, assure quality standards are met, actively cook foods according to established guidelines, model exemplary customer service, uphold food safety and cleanliness standards, indirectly supervise others, and coach and train staff.

Required Job Qualifications
- One year of experience in a foodservice operation.
- Leadership skills demonstrated through a positive attitude, pro-active approach to work, ability to mentor and train others, and delegate tasks.
- Two or more years of experience in a foodservice operation as a cook and/or work leader.
- Experience in a high-volume foodservice operation.
- Certificate, Associates, or Bachelor’s Degree in Culinary Arts or Hospitality Management from an accredited institution
- Demonstrated ability to handle multiple activities and tasks with competing priorities.
- Demonstrated interpersonal and verbal communication skills necessary for building and maintaining successful work relationships.
- Exemplary customer service skills.
- Demonstrated experience providing memorable customer service interactions with customers and collogues.
- Food safety certification such as ServSafe.

- Indirectly supervise Cooks, Foodservice Workers, Temporary Hourly Employees, and Student Employee within a defined work area.
- Model appropriate behaviors that uphold the University’s Principles of Community.
- Guide the food production and service for Cooks, Foodservice Workers, Temporary Hourly Employees, and Student Employees in a defined work area.
- Train and coach employees that are indirectly supervised on food production, quality, safety, and proper and safe use of production equipment.
- Assure staff in the defined work area are meeting defined standards of food production, quality, and safety.
- Actively prepare foods area using skills that include, but are not limited to, baking, roasting, sauteing, frying, grilling, broiling, steaming, chopping, measuring, and mixing.
- Assure foods that are served always meet the highest standards of quality and appearance.
- Understand and safely use power operated foodservice production and cleaning equipment.
- Meet defined food production standards guided by standardized recipes and menus.
- Provide input on food production volume and inventory levels to assure services are not disrupted by outages.
- Participate in food and supply ordering within a defined work area.
- Record and verify necessary food production and service temperatures to assure the highest standards of food safety are met continuously.
- Monitor and restock food and supplies to prevent disruptions in service.
- Conduct inventory and forecast future food and supply needs using defined menus and standardized recipes.
- Conduct opening and closing procedures in a defined work area.
- Always offer exemplary customer service.
- Assure established customer service standards are modeled and met by indirect reports.
- Establish and nurture a positive relationship with students, customers, and collogues.
- Attend assigned and voluntary CSU, HDS, and department training sessions to continue improving knowledge and skills.
- Successfully obtain the ServSafe food safety certification and maintain certification while employed as a Lead Cook.
- Complete other duties as assigned.
