Position Summary/General Description:
An Assistant Food and Beverage Operations Manager directly oversees all dining room, beverage, banquet and kitchen operations; manages and develops staff; and ensures sanitation standards and department budgetary guidelines are adhered to.

- Oversees all food and beverage, banquets and kitchen operations.
- Supervise and direct the staff ensuring that: 1. The guest is greeted by the server in the shortest amount of time; (2) empty tables are cleared within the shortest possible time (3) the dining room, kitchen, beverage and banquet shifts are properly staffed at all times; and (4) the dining room, kitchen, beverage and banquet areas are clean in accordance with Food Systems Food Safety & Sanitation guidelines.
- Perform supervisory responsibilities (e.g., Scheduling; payroll/track labor; attendance; labor, recommend hire, discipline and termination; train, coordinate, evaluate and appraise staff, manage daily operations, and communicate information).
- Perform administrative responsibilities (e.g., Track outlet expenses; process purchase orders and invoices; conduct monthly food and supply inventories; cash accountability and cash management; inventory control.).
- Constantly encourages teamwork, professionalism and creativity among staff.
- Develop and implement creative strategies to increase revenues and average check amounts.
- Develop effective shift strategies and ensure daily, informative shift meetings are held.
- Ensure guest satisfaction and necessary follow-ups to include constant monitoring of guest satisfaction (e.g., Surveys, comment cards, emails, letters, and phone calls).
- Plan, coordinate and implement entertainment/special events and holiday functions.
- Work with the culinary staff on creating menus, pricing, specials, shared budgets for china, glass, silverware and equipment, food costs, monthly expenses.
- Create and communicate of all restaurant operating hours and schedules.
- Manage all P&L’s and assists manager with the budget process.
- Manage all beverage inventory and cost of sales.
- Handle all restaurant marketing to include creating marketing materials.
- Lead all F&B training to include ServSafe Food Safety, Food Handling, Alcohol Server Licensing, Micros, Cash Handling and FOH service training.
- Build relationships and loyalty with guests through sincere and meaningful interactions (e.g., learn guests’ names and preferences; connect with them individually and professionally; smile; make eye contact and verbally greet guests from arrival to the property through departure; and provide fast and friendly service to guests).

- At all times maintain a courteous, positive and professional working relationship with all Ellis Park personnel and the general public (e.g., coworkers, clients and vendors).
- Work under pressure; maintain regular and punctual attendance including working odd and unusual hours, weekends and holidays.
- Perform additional duties and responsibilities as necessary or assigned.
- High School Diploma or GE required.
- 3-5 years of relevant work experience in the capacity of a supervisor in a restaurant or food service area & demonstrated ability to lead.
- Must be able to obtain and maintain a valid license through the Kentucky Horse Racing Commission (KHRC).

- Obtain and maintain Alcohol Server License
- Obtain and maintain Serv-Safe Certification (Instructor Level).
- Proficient with a computer and software (MS Outlook; MS Excel and MS Word).
- Proficient operating a cash register and Micros POS systems.
- Operate PayCor (i.e. attendance, timecards, recruiter).
- Operate Property Management System.
