Must be available to work weekends, opening, and closing shifts.
Experience in meat cutting and management skills are required
Purpose
To select and cut fresh meat and seafood, and supervise department staff to meet objectives for sales, margin and customer service.
Responsibilities
Purchasing
· Receive orders, or ensure proper receiving by department staff, in accordance with established procedures.
· Review invoices for accuracy.
Meat Cutting
· Establish standards for meat cutting to meet quality, pricing, margin control, and customer service goals.
· Cut meat and oversee meat cutting for department.
· Establish and oversee adherence to health and safety standards and practices for department meat cutting and handling.
Merchandising
· Plan attractive meat and seafood displays, using color and texture to enhance.
· See that displays are replenished, rotated, and checked for quality.
· Ensure accurate product labeling and clear, attractive signs.
· Assist customers with product questions and special orders.
Personnel Management
· Ensure on-the-job training.
· Conduct performance evaluations.
· Schedule hours for department staff within budget, and review timecards.
· Organize meetings of meat and seafood department staff as needed.
· Ensure Department staff are informed of storewide meetings and policy changes.
General Management
· Review financial reports of department performance and take corrective action as needed.
· Attend Management Team meetings and storewide meetings.
Department Maintenance
· Maintain meat displays, freeze, prep and storage areas in clean, orderly condition, meeting health department standards.
· Conduct regular inventory counts.
· Maintain department equipment in working order. Advise Operations Manager of equipment repair or replacement needs.
