Job Summary
We are seeking a full-time Assistant Kitchen Manager to aid in the day-to-day operations of our overnight camp food service for adults and youth. The successful candidate will assist with menu planning, preparing 3 daily meals, maintaining and cleaning an industrial kitchen, ensuring health and safety standards, and more.
About Us
Camp Pennyroyal is located on a beautiful 180-acre property, featuring an 8-acre lake, three year-round buildings, platform tents, screened cabins, and primitive camping areas. Our program hosts Girl Scouts entering grades 4 through 12 with up to 70 campers per session. Programs are run by paid camp staff and Girl Scout volunteers.
Duties and Responsibilities
- Assist with menu planning, preparing 3 daily meals, and maintaining an industrial kitchen.
- Evaluate and ensure special food requirements for campers and staff, such as food allergies and dietary restrictions.
- Partner with administrative camp staff to plan, prepare, and deliver timely and accurate pack-out and travel camp food.
- Help maintain accurate inventory of food and cleaning supplies.
- Perform routine maintenance, sanitation, and upkeep of equipment and food service-related facilities.
- Ensure sanitary integrity of facilities, equipment, and food products.
- Respond to situations requiring aid, and assist campers in emergencies (fire, evacuation, illness, or injury).
Requirements
- Minimum of 6 months of customer service experience.
- Minimum of 6 months experience in an industrial kitchen.
- Minimum of 6-12 months of prior Kitchen or restaurant management.
- Documented experience in meal preparation for those with restricted diets and/or food allergies.
- Safe-Serve food safety certification.
- Adaptable and flexible within a fast-paced working environment.
- Ability to work non-traditional hours, including early mornings, evenings, and weekends.
- Proficient understanding of sanitation and regulations for workplace safety.
- Proficient understanding of nutrition guidelines, food handling techniques, preparation, and cooking procedures.
Work Environment
The camp kitchen is air-conditioned, has manual and mechanical food service equipment, a dish sanitizer, multiple sinks, fridges, countertops, a table workspace, and restrooms. This position frequently works with standard kitchen equipment, including freezers, refrigerators, ovens, stove-tops, broilers, microwaves, blenders, mixers, slicers, food processors, commercial dishwashers, knives, and common kitchen cleaners.
