The Gilpin Casino is currently in search of an “F&B Shift Manager”. We first opened our doors in 1992 following the legalization of gambling. Situated in the heart of the storied gaming district, this historic building offers the same “Old West” charm as it did in 1869. The Gilpin Casino encompasses more than 37,000 square feet with 400 slot machines and Lucille Malone’s Restaurant that serves legendary comfort food.

Essential Job Responsibilities and Duties:
- Hire and train all front of the house Lucille’s employees, bartenders, cocktails servers, bar backs, leads, and supervisors
- Schedule and assign workstations to all employees listed in General Summary
- Coordinate daily front/back of house restaurant operations
- Maintain established service standards
- Estimate future needs for goods, kitchen operating supplies, and cleaning products
- Assist in auditing for food waste and nonfood inventory
- Maintain compliance with health codes
- Ensure compliance with sanitation and safety regulations, working in both front/back of house personnel
- Financial management skills such as budgeting, profit, and loss accountability
- Other related duties including but not limited to complying with the following: Food Safety Guidelines, Colorado Limited Gaming Act, Colorado Gaming Rules and Regulations, Colorado Internal Control Minimum Procedures, Colorado Liquor and Beer Codes, Federal requirements for Anti-Money Laundering, Company Policies, and IRS reporting
Skills, Education and Other Requirements:
- Must be fluent in English with some Spanish language preferred
- Must have basic knowledge of computer applications (Windows, Word, Excel, and Outlook)
- Business, food service graduate, or equivalent work experience
- Front and back of house experience along with bar experience required
- Extensive food and beverage knowledge with the ability to recall ingredients and dishes to inform customers and wait staff
- 3 years’ experience in a high-volume restaurant management
- 3 years previous management experience
- Have or ability to obtain ServeSafe Manager certification within 90-days of hire
- A valid Colorado Gaming License
- Identification that establishes identity
- Identification that establishes the right to work in the United States
