The Gilpin Casino is currently in search of a “Line Cook—Lucille Malones Restaurant”. We first opened our doors in 1992 following the legalization of gambling. Situated in the heart of the storied gaming district, this historic building offers the same “Old West” charm as it did in 1869. The Gilpin Casino encompasses more than 37,000 square feet with 400 slot machines and Lucille Malone’s Restaurant that serves legendary comfort food.

Essential Job Responsibilities and Duties:
- Prep for soup and cook, prep vegetable of the day, make gravy and sauces for the day, stock freezer for line, slice fruit, fill all containers for condiments
- Prep items for line all hot food
- Prepare orders for guests
- Prep all meat for line, including ribs, prime rib, bacon, ground meats. Cut and clean lobster tails
- Other related duties including but not limited to complying with the following: Colorado Limited Gaming Act, Colorado Gaming Rules and Regulations, Colorado Internal Control Minimum Procedures, Colorado Liquor and Beer Codes, Federal requirements for Anti-Money Laundering, Company Policies, and IRS reporting
Skills, Education and Other Requirements:
- Previous cooking skills in a restaurant setting preferred
- High School Diploma or equivalent work experience
- Must be 18 years of age
- 1 year of previous kitchen/cooking experience preferred
- Identification that establishes identity
- Identification that establishes the right to work in the United States
