What are the responsibilities and job description for the Sushi Sous-Chef position at Katami?
Katami is a brand new concept from 4 time James Beard nominated Chef Manabu Horiuchi of Kata Robata. Katami, which translates to gift or keepsake in Japanese, is a sushi-forward restaurant representing what Chef Hori believes is the future of Japanese cuisine in America. Now open at 2701 W. Dallas, Katami will be where the sushi really shines. Chef Hori is sourcing fish flown in almost daily from Japan, relying even more on his longtime relationships with Japanese fishmongers to send him the freshest fish. 80 to 95 percent of the fish on Katami's is caught off the coast of Japan within 20 hours of hitting the plate. At Katami, guests enjoy luxury ingredients like caviar service, truffle, foie gras, A5 Wagyu as well as a sushi only omakase and a more in depth full Katami omakase. The menu encourages guests to order dishes from each section: Sashimi, Nigiri, Makimono, Cold & Hot & Specialty Dishes and a selection of 3-5 A5 Wagyu dishes with beef sourced directly from Japan. The modern space designed by Abel Design Group features a bar and lounge, which allows Katami to offer a more expansive beverage program thanks to additional space. Expect a wine list ranging from the accessible to a reserve list, craft cocktails, an extensive sake list, and a strong selection of Japanese whisky.
