This role offers the opportunity to shape a distinctive menu centered on fresh, high-quality seafood and fire-grilled flavors while managing a well-established, high-volume kitchen.
The ideal candidate is a dynamic, experienced chef with a passion for open-fire cooking, seafood, and seasonal ingredients. They will be responsible for overseeing all aspects of kitchen operations, including menu development, food quality, team leadership, and financial management.
Key Responsibilities:
- Develop and execute a seasonal, seafood-focused menu with a strong emphasis on wood-fire grilling.
- Lead and inspire a team of culinary professionals, fostering a positive and high-performance kitchen culture.
- Ensure the highest standards of food preparation, presentation, and consistency.
- Maintain compliance with food safety and sanitation regulations.
- Oversee inventory, food cost management, and waste reduction strategies.
- Collaborate with management on special events, menu innovations, and guest experiences.
- Recruit, train, and develop kitchen staff.
- Monitor and maintain kitchen equipment and liaise with suppliers to source premium ingredients.
Qualifications & Requirements:
- Proven experience as a Head Chef or Executive Chef in a high-end, seafood-focused, or wood-fire cooking environment.
- Strong leadership and communication skills with the ability to build and maintain a cohesive team.
- Expertise in menu design, costing, and financial oversight.
- In-depth knowledge of seafood preparation, fire cooking techniques, and modern plating styles.
