Proper Hospitality is seeking a Banquet Chef to join the Heart of House at Montauk Yacht Club, our 107-room luxury property within The Collective.


Spanning 35 acres on Montauk’s Star Island, Montauk Yacht Club offers waterfront views, a private beach, three pools, multiple dining options and over 200 wet slips that can accommodate boats from small day cruisers to 300-foot superyachts. Holding eight decades of East End history as an elite social club and thoughtfully reborn for the modern traveler, guests can expect classic East Coast architecture, well-appointed interiors and detail-driven amenities. 


As the Banquet Chef, you will be responsible for creating unforgettable dining experiences that reflect the sophistication and personalized service of our hotel. This role demands culinary excellence, strong leadership, and a passion for crafting customized menus that exceed guest expectations.


Key Responsibilities:


Culinary Leadership

  • Design and execute innovative banquet menus tailored to meet client needs and event themes, while maintaining high standards of quality and presentation
  • Ensure all food preparation aligns with the hotel’s luxury standards and meets dietary requirements or special requests
  • Oversee and participate in food preparation during events, ensuring consistency and timeliness


Team Management

  • Recruit, train, and mentor a team of culinary professionals dedicated to banquet and event operations
  • Schedule and manage kitchen staff to ensure efficient workflow and coverage during banquet events
  • Foster a positive, collaborative work environment that encourages creativity and teamwork


Operational Excellence

  • Coordinate closely with the Events Manager and other departments to ensure seamless execution of banquet services
  • Manage food inventory, procurement, and costs to align with budgetary goals
  • Uphold all health and safety standards, maintaining a clean and organized kitchen


Guest Experience

  • Interact with clients to understand their vision for events and translate it into exceptional culinary offerings
  • Handle guest feedback professionally and adapt menus or services to enhance satisfaction


Qualifications:


  • Proven experience as a Banquet Chef or Sous Chef in a luxury hotel, resort, or upscale restaurant setting
  • Expertise in creating diverse menus, including international cuisines, with a focus on fine dining
  • Strong leadership skills with the ability to manage and inspire a culinary team
  • Excellent organizational and time management abilities, especially under high-pressure conditions
  • Culinary degree or equivalent professional experience required
  • Familiarity with food safety regulations and best practices
