Position Summary:

The Director of Food & Beverage provides leadership and management for the Food & Beverage department, overseeing the planning, development, and efficient operation of multiple dining and beverage outlets, including high-end dining, pub-style dining, and beverage venues. This role is responsible for setting and achieving financial projections, goals, and objectives while developing and training a highly skilled and motivated team at all levels. Additionally, the Food & Beverage Director ensures that all outlets adhere to North Fork Mono Casino policies and comply with Health Department regulations, maintaining excellence in service, quality, and operational efficiency.

Essential Functions:

  • Responsible for practicing, supporting, and promoting North Fork Mono Casino’s culture and always demonstrating exemplary Service Standards.
  • Provides strategic leadership and direction for all aspects of the Food & Beverage operations at the Casino Resort.
  • Identifies and drives new strategic opportunities to align with evolving business needs and priorities, including leading concept development for all venues.
  • Leads the development of distinctive signature services and products that showcase local flavor and authenticity.
  • Builds and leads a high-performing management team, ensuring accountability and driving exceptional guest service across all Food & Beverage outlets.
  • Supports the development, administration, and oversight of operating and capital budgets, ensuring financial objectives are met. Analyzes performance results, identifies opportunities for improvement, and implements strategic action plans to enhance efficiency and profitability.
  • Ensures effective communication and implementation of all North Fork Mono Casino training programs across Food & Beverage operations.
  • Optimizes outlet service and profitability by conducting operational analyses, forecasting, and strategic staffing, while effectively managing food, beverage, and labor costs to ensure efficient operations.
  • Develops standards to ensure exceptional quality, value, and presentation of all food and beverage products served to Guests.
  • Coaches, mentors, and motivates the Food & Beverage team while setting benchmarks for ongoing training in guest service, policies, and procedures, ensuring hospitality standards are upheld across all outlets to ensure exceptional guest experiences and achieve financial goals.
  • Ensures the implementation and execution of North Fork Mono Casino culture and Food & Beverage team member engagement initiatives to enhance productivity and morale.
  • Provides senior management with recommendations for operational enhancements that drive initiatives and promote excellence.
  • Ensures that all policies and procedures set by North Fork Mono Casino, Tribal Gaming Commission, Tribal/State Gaming Compact, ABC, food safety/sanitation and all regulatory requirements are in compliance.
  • Maintains a strong partnership between Front and Back-of-House operations by ensuring regular, open communication with the Executive Chef.
  • Develops and maintains effective communication with all departments across North Fork Mono Casino.
  • Other job-related duties as assigned.

_ Required Skills/Abilities: _

  • Ability to communicate effectively with Guests, Team Members and Management in both written and verbal form.
  • Ability to make quick judgment decisions.
  • Excellent attention to detail both in products, service and the appearance of all operating Food and Beverage outlets.
  • Must demonstrate sound judgment and maturity in his or her decision‐making ability, even when dealing with difficult situations.
  • Must possess and demonstrate great attention to detail in order to maintain unit’s appearance and operating standards.
  • Excellent analytical skills enhancing the ability to understand the activity of the department.
  • Prior demonstrated experience in evaluating the performance of the personnel in a food and beverage department; and planning and administering a training and development program that results in well‐trained Team Members at all levels and permits advancement for those persons qualified and interested in career development.
  • Ability to clearly describe, assign and delegate responsibility and authority for the operation of the various food and beverage sub‐departments, i.e., room service, restaurants, banquets, kitchens, stewards, etc.

_ Minimum Qualifications:_

  • Bachelor’s degree in related field required, or equivalent combination of education and work experience.
  • Minimum of ten (10) years Food and Beverage/Hotel experience at a senior management level; gaming industry experience preferred.
  • Experience in service systems and methods in casual, specialty and high-volume restaurants preferred.
  • Must be able to obtain and maintain a Gaming License from the Tribal Gaming Commission.

_ Physical Requirements: _

  • Full time on site in Madera, CA.
  • Requires normal, corrective vision range, the ability to see color and the ability to distinguish letters, numbers and symbols.
  • Ability to climb, bend, reach, walk, and stand for the duration of shift.
  • Requires manual dexterity to operate job related equipment.
  • Must be capable of lifting 50 lbs with or without assistance.
  • Requires the physical ability to stand for long periods of time, bend or reach to a height of 6 feet with or without assistance

_ Work Conditions: _

Team Members will be in constant contact with fellow Team Members and Guests. Work may be performed in small areas with 3 ft. wide access. Tasks performed from a sitting or non‐sitting position. Performance of job duties will require standing, walking, lifting, reaching, pushing, pulling and grasping. These tasks include the maintenance and care of assigned area work area. Work is typically in an area which may be unusually hot, cold, noisy, and may contain secondhand smoke. Work may be performed in a confined area. Work may be performed in high places. Work may be scheduled at various hours, including working overtime, and during evening, weekends, and holidays. Work may entail trained chemical usage. Work is in a high volume, fast paced environment with frequent interruptions.
