With the majority of our guests spending most of their day in the club, food is an integral part of their holiday and our restaurant team are at the forefront.
We are seeking an experienced and dynamic Group Restaurant Manager to oversee the operations of our restaurants and weekly events at the club, as well as providing support to our satellite sites, Mikro Nisi and The Deli Kitchen. Reporting to the F&B Manager, they will ensure high service standards, drive revenue through effective upselling, and maintain cost control measures while delivering exceptional dining experiences for our guests.
The Club is home to two busy restaurants : The Terraces, open for lunch and dinner, seats around 80 covers with a menu featuring dishes cooked on the barbeque and fi re table. Tasi is open daily for breakfast, serving a balance of healthy options and old favourites and also provides an informal setting for lunch with Mediterranean bistro-style dishes which can be enjoyed with a bottle of wine and a stunning view of the Ionian sea.
The Peli Deli Kitchen is open for breakfast, lunch and dinner and offers a laid back alternative to our busy club restaurants where our guests can enjoy simple Italian infl uenced food, done well, whilst enjoying views of the Ionian Sea.
The most recent addition to the Peligoni family is Mikro Nisi, a short drive along the coast from the club – a modern Greek fi sh taverna open for lunch and dinner daily with a sharing, mezze style menu inspired by local ingredients and its seafront setting.
Evenings at Peligoni are a unique affair with something different happening each night. The Courtyard hosts weekly events including our family barbeque and food festival nights : live music accompanies pop up food stalls where our chefs produce creative and tasty street food. In addition to our usual weekly agenda we also host guest chef evenings, private parties and weddings that all require an extra eye for detail.
Each club restaurant has its own supervisor, who reports to the Group Restaurant Manager. This is a challenging role, perfect for an experienced restaurant manager looking to take the next step in their career, overseeing multiple outlets in a stunning environment.
KEY RESPONSIBILITIES
- Support Restaurant and Events Supervisors with the running of the club restaurants, ensuring a seamless and efficient service
- Provide cover on the Restaurant Supervisor’s days off
- Monitor service standards across all restaurants, including at The Deli Kitchen and Mikro Nisi, and address any service issues promptly
- Encourage excellent working relationships between the restaurant, bar and kitchen teams to ensure smooth service flow
- Work with the Restaurant Supervisors to maximse restaurant bookings and ensure effective table management
- Implement and encourage effective upselling techniques to achieve revenue targets
- Work with the F&B Manager to analyse sales data and implement strategies to drive additional revenue
- Conduct pre-season training to ensure all team members are well-versed in service standards, menu knowledge, and upselling techniques
- Provide continuous training and support throughout the season to maintain and improve service quality
- Encourage a positive and collaborative work environment, ensuring high team morale
- Create and manage staff schedules to ensure efficient coverage while optimising labour costs
- Monitor labour expenses and adjust schedules as needed to maintain budgetary targets
- Be able to talk to guests effectively about the club and what is on offer
- From time to time you will be required to take on additional tasks and duties relating to the smooth running of the club
