What are the responsibilities and job description for the Chef - Pastry position at Polynesian Cultural Center?
Description
In collaboration with the Executive Chef, responsible for all pastry menu execution and development. Ensure excellent service & hospitality are provided for all guests. Drive Service & Hospitality Standards for the pastry team. Ensure high performance and overall excellence & hospitality in the Pastry Department throughout each day's specific venue's products.
Essential Functions :
- Ensure physical operation is opened and closed successfully and ensure all desserts, pastries, and breads are expedited effectively during operation hours to ensure consistent execution in all of the bakery's offerings and timely flow of service. Maintain positive working relationships with all leaders and staff throughout service and working periods by continuously providing support to all bakery / pastry staff actively participating in the in-line as needed and ensuring that all recipes, products, food preparations, and food execution meet the restaurant's specifications and commitment to culinary excellence.
- Hold the team accountable to following all recipes and presentation specifics (including but not limited to standard portion sizes, cooking methods, quality standards & ingredients) as set forth by following proper plate presentation and garnish set up for all dishes while ensuring team appropriately stocks and maintains sufficient levels of food products at venues during the service period.
- Accountable for ordering and maintaining the appropriate amount and quality of product in-house as well as assisting in food prep assignments and / or cooking during peak periods as needed, also tracks and reports any food waste, monitors food prep inconsistencies, evaluating and correcting team as needed. Ensure that the kitchen & physical plant are kept clean, safe, and up to all "Green" level health code standards.
