**Summary:**
Under the direct supervision of the Executive Chef, the Sous Chef position supervises and coordinates the activities of food preparation, kitchen, pantry, and storeroom personnel at Unicoi State Park and Lodge.

**Responsibilities:**
- Plans or participates in planning menus, preparing and apportioning foods, and utilizing food surpluses and leftovers.
- Specifies the number of servings to be made to control portion costs.
- Supervises kitchen personnel to ensure cleanliness and standards are maintained.
- Tastes, smells, and observes food to ensure conformance with recipes and appearance standards.
- Supervises inventory, storage, and distribution of food and supplies.
- Purchases food, kitchen supplies, and equipment.
- Works with the Executive Chef in determining pricing.
- Meets with professional staff, customers, or client groups to address menu inconsistencies or plan menus for special occasions.
- Ensures kitchen staff follows safe work practices.
- Supervises proper breakdown and usage of all leftover foods.

**Supervisory Responsibilities:**
Directly supervises the Kitchen Department. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws.
**Education and/or Experience:**
Associate's degree (A.A.) or equivalent from a two-year college or technical school; or six months to one year of related experience and/or training; or an equivalent combination of education and experience.
