Vail Mountain Dining Chef de Partie, Game Creek - Winter Seasonal, Full Time
A fully proficient cook with a positive work ethic and general leadership qualities, who has experience supervising others. This person is either a graduate of a two-year culinary program, or has at least three years experience in quality establishments.
Responsibilities Include (but are not limited to):
- Should have the ability to be responsible for all departments of an operation.
- Possesses strong abilities in all applicable cooking techniques and practices.
- Possesses strong knife skills, and has the ability to work multiple stations.
- Ability to handle own station
- work off prep list and complete station set up in time allotted
- fabricate items to standard during service and completes prep list for next service period
- Possesses strong fabrication skills and understands the importance of setting up a prep list for next service period
- Understands the importance of standards, speed, and quality
- Practices good personal hygiene, safe food handling and culinary skills
- Understands and practices HACCP principles
- Owns proper culinary tools
- Have ability to manage the outlet during the chef’s absence, supervise all restaurant stations, and operate to chef’s standards
- This person will have direct reports and will be responsible for scheduling and performance management/evaluations
Qualifications:
- High school diploma or equivalent - required.
- Must be able to lift and carry 40 lbs - required.
- Must be able to stand for 8 hours - required.
- Must be fluent in English - required.
- 3 years of previous experience in a fast paced restaurant - required.
- Previous supervisory experience - required.
- Team oriented attitude is a must - required.
- Must be available to work weekends and holidays including: Thanksgiving, Christmas Day, December 26th through January 2nd, Presidents’ Day Weekend, and any other holidays as requested - required.
- ServSafe certification - preferred.
