General Description:

The Director of Dietary will be responsible to plan, organize, develop, and direct the overall operation of the facilities’ Dietary Departments. In accordance with current federal, state and local standards, guidelines and regulations and as may be directed by the Corporator Director of Dietary to assure that quality nutritional services are provided on a daily basis and that the dietary department are maintained in a clean, safe and sanitary manner.

QUALIFICATIONS:

· Strong organizational and analytical skills; oral and written communication skills.

· Maintains required & appropriate certifications.

· Must be able to relate positively and favorably to facility residents, families and government regulators, and to work cooperatively with other employees at all levels.

· Must maintain regular attendance.

· Must meet all local health regulations. This requirement also includes criminal background, investigation, and reference inquiry.

· Must exhibit effective language, skills, and ability to read, analyze and interpret general business periodicals, professional journals and technical procedures.

· Must be able to perform the Essential Job Functions of this job, with or without reasonable accommodation.

ESSENTIAL JOB FUNCTIONS:

A. DEPARTMENT MANAGEMENT / SUPERVISORY FUNCTION

Duties: Assist in the recruitment interviewing, selection and orientation of support personnel. Coach/Counsel/discipline dietary support staff as necessary. Oversee weekly work schedule and supply purchase within budgetary constraints. Determine departmental staffing requirements necessary to meet the Dietary Department needs, and assign sufficient support personnel.

Monitors menu based on corporate menus and in compliance with applicable regulations. Maintains recipes and product specifications for all menus items.

Monitors standards of performance for food service operation. Ensures the facilities’ dietary staff maintain preparation of menu items in compliance with OBRA and Title 22 regulations and with therapeutic diet orders. The Director of Dietary must ensure safe and superior food service, delivery and nutritional care of residents. Monitors that dietary service work areas are maintained in a clean and sanitary manner. Monitors all food storage rooms, preparation areas, etc, are maintained in a clean, safe, and sanitary manner.

Assist the Registered Dietitian in identifying, evaluating, and classifying routine and job related dietary functions to ensure that tasks involving potential exposure to blood/body fluids are properly identified and recorded.

Reviews care of residents at risk for nutritional decline for the purpose of verifying food preferences, nutritional needs, appropriate plan of care, and oversee nutritional complications. Review therapeutic and regular diet plans and menus to assure they are in compliance with the physician’s orders. Reviews resident charting per regulations. Coaches Dietary Services Managers and Dietitians on appropriate interventions for Nutritional Rehabilitation, Patient Policy, Skin Management and Patient Care Plan as needed. Reviews discharge planning of the dietary services portion of the residents’ discharge plan.

Evaluate and direct the Dietary Department, its programs and activities. Monitors capital budgets requests. Provides input into the budgeting process. Reviews food costs for within range designated by the budget. Participate in surveys (inspections) made by authorized government agencies, as needed.

Reviews the plan of correction for dietary service deficiencies noted during survey inspections. Assist the Quality Assessment and Assurance Committee in developing and implementing appropriate plans of action to correct dietary deficiencies. Serves on, participates in various committees of the facility as needed. Confers routinely with administrators regarding department status and issues.

Develop and participate in the planning, conducting, scheduling of timely in-service training classes that provide instructions on “how to do the job,” and ensure a well-educated staff of the dietary services department. Performs employee, resident, and community education as needed and/or desired.
