1. Working knowledge of HACCP plan and HACCP checks
2. Working knowledge of SOP plans and SSOP checks
3. LOTO trained
4. Know all GMP's and plant rules
5. Must know how to perform GMP audits.
6. Water and ice monitoring-help collect samples and send to lab
7. E-Coli and Salmonella sampling procedure.
8. Complete various checks, collections, and tests including but not limited to: Salmonella, E-Coli, presentation, debone, cutup, and chlorine
9. Knowledge of but not limited to: plant safety, calibration of scales, pest control, security/food defense, bloodborne pathogens, emergency action plans, mock recalls, MSDS, LOTO, animal welfare, and chiller management systems.

Experience: At least Six months of related experience
