Position Summary:

Provides support to the dining team in managing and executing dining services in the dining hall, retail, concessions, and catering operations. Areas of focus include food/supply ordering, food production and service, food safety, recipe management, food cost control, execution of daily operations and events, and supervision of staff.

Essential Functions:

Food Production – 60%

· Sets up daily pars for “Grab and Go” program.

· Assures worksheets and pull sheets are maintained.

· Performs daily order for various vendors.

· Ensures EOM inventories are prepared for manager’s final approval.

· Tracks guest counts and sales figures.

· Ensures temperature logs are maintained.

· Communicates and directs appropriate portion sizes and utensils are being used per recipes.

· Assists in developing new recipes for regular menus and special events.

· Ensures proper sanitation for all unit health inspections.

· Assists in the utilization of food surpluses and leftovers.

· Utilizes CBORD FSS to manage food production (i.e. prepare production sheets, enter/modify recipes, etc.)

· Ensures food quality, safety, and presentation standards are being met, including training and coaching staff on expectations.

· Identifies allergen traits in foods served and ensures foods are labeled accurately. Communicates allergen information directly to customers with food allergies as needed.

· Ensures invoices are received and recorded.

· Assists in weekly production and culinary meetings.

Service Execution and Staff Supervision - 20%

  • Service Execution
  • Manages execution of dining services to meet BASC’s quality and customer service standards, including ensuring appropriate staffing levels, food quality, food presentation, food safety, customer flow/ingress/egress, cleanliness, speed of service, and overall customer satisfaction.
  • Manages daily operations.
  • Assists in the planning of and preparation for special events.
  • Executes special events.
  • Assures development and maintenance of appropriate signage for the unit.
  • Appropriately responds to customer questions/comments/concerns with the aim to deliver exceptional customer service.

o Maintains and updates student manager daily checklist.

  • Supports student employee recognition program.
  • Maintains student incident log, tracks disciplinary documentation.
  • Ensures accurate time and attendance data/logs for shifts when acting in the manager-on-duty role.
  • Staff Supervision - Full-time union, part-time, and student employees
  • Assists with interviewing, hiring, and scheduling of new staff members.
  • Trains, coaches, and provides daily supervision of staff including: coaching, counseling, and performance evaluation.
  • Conducts Daily Line Up meetings.
  • Assists with student manager meetings.
  • Acts as Kitchen Safety Manager & ensures adequate and appropriate communication with staff.
  • Trains and coaches student managers regarding the supervision of student employees.

Administrative Responsibilities - 20%

  • Operates the Agilysys POS system system, including troubleshooting basic issues. Trains staff on POS system and proper procedures, including cash handling.
  • Supports other dining technology as needed, including Byte coolers.
  • Creates and maintains operations manual and station procedures for dining units.
  • Runs daily reports.

· Under the guidance of the manager, composes and administers full time/part time and student manager evaluations.

· Under the guidance of the manager, composes and administers full time/part time and student manager write ups for any disciplinary issues.

  • Participate in company orientation and training programs including Student Manager Orientation, annual Return to Work Meeting, etc.
  • Works in a variety of dining units as necessary.

· Additional duties as required or requested.

Qualifications:

Education and Training

· Associate’s degree or above in culinary, hospitality or business administration, preferred

· Any combination of education and experience that demonstrates an ability to do the job will be considered.

Work Experience:

· 3 years supervisory experience in a restaurant or institutional food service setting, preferred

· 1 year chef experience in a restaurant or institutional food service setting

·Experience in the institutional food service setting, preferred

Physical Demands:

·Ability to lift/move 50 lbs.

·Ability to bend, stoop, kneel, crouch and twist.

·Ability to stand and or walk for prolonged periods of time – all day if necessary.

·Fine motor skills to use knives and kitchen tools

· Good visual acuity for reading reports, computer work, etc.

· Ability to move around dining units and campus as necessary.

Licensure/Certification:

·ServSafe Certification

·Valid driver’s license in good standing

Skills/Abilities:

·Demonstrated ability to supervise and direct others

·Demonstrated customer service skills

·Basic math and budgeting skills

·Demonstrated ability to communicate effectively with others both orally and in writing.

· Knowledge of and ability to use a computer and required computer systems. Must be adept in the use of Microsoft Office Suite applications. Experience with Gmail, ADP E-time, CBORD, and Agilysys POS preferred.

· Food production skills including: food management, knife skills, sanitation.
