SummaryThis position will challenge you and adapt your culinary skills to our Polynesian fare! This position will assist the Chef de Cusine with planning, procurement and preparation of dishes for private events and banquets.
Essential DutiesTo perform this job successfully, an individual must be able to perform each essential duty satisfactory. Reasonable accommodations may be made to enable individuals with disabilities to perform these essential functions.
Culinary
  • Cook or oversee all batch cooking, cold prep and desserts for the banquet department
Ensure proper quantities of each prepped item and backup items necessary
  • Attempt to accommodate any special request made by the guest to the best of the restaurant’s capability.
Timeliness in cooking and plating dishes for prompt service
Procurement
  • Responsible for food procurement, delivery, and storage as directed by the Chef.
  • Communicate to the Chef de Cuisine any concerns regarding food, price, delivery problems, and shortages.
  • Communicate to the Chef de Cuisine any concerns regarding equipment problems.
  • Supervise prep staff responsible for the daily preparation of all food items to ensure that methods of cooking, garnishing, and portion sizes are per the corporate specifications.
Communication
  • Attend food, beverage and management staff meetings.
Communicate with banquet staff to ensure proper coursing and firing food times
  • meet or exceed all deadlines established
  • Be physically present in the workplace on a daily basis as scheduled

Education & ExperienceFormal education with a culinary background or a related field.
2 years of relevant banquet experience.
