Key Responsibilities
- Lead and oversee the kitchen team, ensuring high-quality food preparation and presentation.
- Develop and refine an authentic yet innovative Peranakan menu, incorporating traditional techniques and premium ingredients.
- Maintain consistency in flavors, textures, and portioning for all dishes.
- Ensure efficient kitchen operations, from mise en place to plating.
- Train and mentor kitchen staff, fostering a positive and high-performance team.
- Manage kitchen inventory, supplier relationships, and food cost control.
- Ensure compliance with food hygiene and safety regulations.
- Collaborate with restaurant management on seasonal menus, promotions, and new concepts.
Requirements
- Proven experience as a Head Chef or Senior Sous Chef in a Peranakan, Nyonya, or Singaporean restaurant.
- Deep knowledge of Peranakan cooking techniques, ingredients, and heritage dishes.
- Strong leadership skills with the ability to train and inspire a kitchen team.
- Creative approach to menu development while respecting traditional flavors.
- Excellent organizational and time-management skills.
- Ability to work under pressure in a fast-paced kitchen.
- Understanding of cost control, inventory management, and kitchen operations.
