Head Sushi Chef Responsibilities
Work as a team with the entire restaurant staff
Oversee and manage all sushi chefs and operations concerning sushi, ensuring a clean and organized sushi program.
Reviewing staffing levels to meet service, operational, and financial objectives.
Hiring, training, scheduling, evaluation of the Sushi team
Performing administrative tasks, taking inventory of food and equipment supplies, and doing purchase orders
Setting and monitoring performance standards for the sushi team
Collaborate with executive management to create a successful and efficient operation
Always create a great guest experience
Adhere and direct the team to follow standard recipes to uphold quality and consistency
Assist in the development of new menu items and specials
Help manage kitchen daily operations, ordering, recipe adherence and labor
Help monitor food freshness and quality
Head Sushi Chef Qualifications
4 years experience as an Head Sushi Chef
8 experience in hi-volume / fine dining kitchens
Passion for food and cooking
Ability and passion for leading a team
Knowledge of labor and food cost principles
Hands-on approach to running a sushi team
Must have experience in high-end Asian cuisine / Sushi / Omakase.
Ability to step into an established brand and grow with the company
