What are the responsibilities and job description for the Egg Cook position at Middle Way Cafe?
Summary of Position:
A Middle Way Line Cook is able to work as a member of a team that prepares a high quality product in a timely manner. They understand and practice sanitation procedures. They are able to follow a recipe and make a consistent product. A Middle Way Line Cook respects the product he or she makes and works in a manner that does not waste product or energy. A Middle way line cook can keep their cool in the heat of battle. Egg cooks have a major responsibility, not only do they work one of the heaviest stations but the paces is fast and expectations are high. If you can successfully become a MWC Egg cook you will be a role model to other cooks, and a potential leader and supervisor. Must always AIM for perfection.
Duties & Responsibilities:
§ Prepares any item on the on the breakfast menu. Understands and is able to assist with the lunch service. Is able to cook eggs perfectly.
§ Have HACCP knowledge to ensure proper cooking techniques and food temperatures.
§ Works as a member of a team. Works in a respectful way with co-workers.
§ Assumes 100% responsibility for quality of products served.
§ Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
§ Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
§ Portions food products prior to cooking according to standard portion sizes and recipe specifications.
§ Maintains a clean and sanitary work station area including tables, shelves, flat tops, steamers, floor burners, convection oven, range and refrigeration equipment.
§ Follows proper plate presentation and garnish set up for all dishes.
§ Handles, stores and rotates all products properly.
§ Assists in food prep assignments during off-peak periods as needed.
§ Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
§ Attends all scheduled employee meetings and brings suggestions for improvement.
§ Performs other related duties as assigned by the manager-on-duty.
§ Highly motivated to go above and beyond, must learn stations checklists and food items in order to advance to another position/station.
§ Must have a food handlers card and proper shoe wear when present at work.
§ Follows proper dress code and has a high sense of personal hygiene.
Qualifications:
§ A minimum of 2 years of experience in kitchen preparation and cooking.
§ At least 6 months experience in a similar capacity.
§ Must be able to communicate clearly with managers, kitchen and dining room personnel.
§ Be able to reach, bend, stoop and frequently lift up to 40 pounds.
Be able to work in a standing position for long periods of time (up to 9 hours).
